My five year old son recently bought "The Magic Bed" by John Burningham home from the library and it turns out to be a very cute and fun way to share the joys of astral projection with kiddies.  It's very much a picture-book story rather than a manual, and in fact I've no idea if the author has even heard of projection, but the illustrations of boy-in-bed hovering over cities, visiting yellow-lit realms etc. are great for firing imaginations.  There's never going to be enormous depth in a book like this, but it does manage to touch bases like deciding whether to talk about it or not and tiger soul retrievals, which isn't bad really.  The induction method the boy experiments with is super-basic (basically bed, prayer, mantras), but is easy to develop with your own suggestions.  Ending as it does with "Now if you lie very still in your bed and find your magic word, perhaps you could travel far away like Georgie" it's intended to be inspirational, and I think it achieves that nicely - my boy loves it anyway!  Here's a little link that shows the illustration style and describes it a bit.
