Phoenix, like the bird?  Well, basically it's a bird that lays an egg and once it does it birsts into flames.  The flames bring life to the embryo and a new phoenix is born.  It's a representation of eternal life.  That's the only phoenix I know about, so sorry if that wasnt the kind you were refering to.
